Breakfast Muffins for On-The-Go Toddlers
Running late and have to still quickly whip something up for breakfast for the kids? Honey that is the story of my life. Every time we make an attempt to get out of the house in the morning it is absolute chaos... then just as I'm about to lock the front door I think "Bugger! The kids need breakfast." Not just any breakfast - takeaway breakfast, by takeaway I mean the type that won't spill all over the car floor, by takeaway I mean something that doesn't need four hands to feed them with, and a fork, or a knife. AND by takeaway, I mean something that they will eat and not refuse because it's "Yucky" (a word that my daughter has now learnt and grown very fond of).
So when a challenge presents itself? We create a solution! And today's challenge is "Breakfast for on the go toddlers".
But who am I kidding? These breakfast muffins are as delicious for a full grown adult as it is a toddler (my daughter loves them so much she calls them cake!).
Ingredients
Step One
Preheat oven to 170 degrees fan forced. In a mixing ball mix together your pancake mix, eggs, milk and maple syrup.
Step Two
Fill your greased muffin tray with your pancake mix and add your mix ins. Bake in oven for 10-15 minutes.
Step Three
Once fully baked allow to cool. Once cooled you may serve. These are also freezable for the emergency situation - just remember to zap them in the microwave before consuming (don't want to feed your kids ice muffins).
